You will not believe how absolutely delicious (and easy) these stuffed avocados truly are! This recipe is completely gluten-free and can be vegan/vegetarian friendly with the simplest of tweaks. I was inspired to create these after being bored of preparing salads for lunch and just wanting to take things outside the box. Just one of these little babies will keep you satisfied and full of energy to make it over that afternoon hump. This dish is packed with nutrient dense foods which provide healthy fats and lots of protein. The basis for my chicken stuffed avocados is a play on guacamole, but with a lot of added extras to make everything even more mouth-watering and delicious.
Let's get started!
For 2 servings
1 avocado, halved
1 lime, halved
1 tomato, seeded and finely diced
1/2 cup poached chicken breast, cubed
1/2 cup chickpeas, well rinsed
1/4 cup parsley, or cilantro
1/2 tsp chili flakes
1/4 tsp cumin powder
1/4 tsp coriander powder
1/4 tsp cayenne
salt and pepper
1. Scoop out the avocado pulp carefully from the skins (you will need them later) and mash in a bowl with the juice of 1/2 a lime and chili flakes.
2. In a separate bowl mix together chicken, chickpeas, tomatoes, remaining spices, salt and pepper, parsley, and juice from 1/2 a lime.
3. Combine the chicken/chickpea mixture with the avocado. Mix well. Stuff the reserved avocado skins and top with additional parsley.
And it's as simple as that. Now dig in and enjoy a meal you can feel great about!
