My sweet tooth has clearly been acting up recently. Between my last post on a raspberry cheesecake and an upcoming one on brownies, I've needed something healthy to kick my cravings to the curb. I enjoy eating smoothie bowls and yogurt parfaits as breakfast on slow, weekend mornings and this granola really takes my bowls to the next level. It's delicious, filling, and packed with nutrients to keep me energized all day (actually till lunch time).
2 cups oats (rolled, quick, etc.)
1/2 cup shredded coconut
2 tbsp coconut oil (melted)
2 tbsp brown sugar
1/2 tsp vanilla extract
Pinch of salt
1/4 cup white chocolate chips
1. Preheat oven to 350F. Mix everything together except chocolate chips and spread on a baking tray. Bake for 6 to 10 minutes or until golden brown.
2. Allow granola to cool slightly and stir in white chocolate chips.
3. Cool completely and enjoy over yogurt and fruit.
