Raise your hands if you love sweet potatoes! I am completely obsessed, as in, sometimes I prefer sweet potatoes over the regular kind. Making the switch to sweet potatoes is a great nutritional choice because they are full of essential vitamins and minerals and a solid source of fiber (if you eat the skin). So now that I've convinced you to run to your grocery store and pick up some sweet potatoes, let's get into the recipe!
This is super simple and comes together with minimal prep. You basically chuck these into the oven and then stuff them once they are baked. This is great for lazy days when you need a mid-day pick-me-up or an easy side for dinner. You can also customize this to your taste by changing up the filling. For today's recipe, I'm adding a simple mixture of feta and cilantro and a added a little kick of heat with cayenne. If cilantro is not your thing, change it up for parsley or skip it all together. I think the feta pairs really well with the sweetness of the potatoes because it adds saltiness and creaminess.

For 2 servings
2 sweet potatoes
1/3 cup feta cheese
few springs of cilantro
1/4 tsp cayenne
1. Scrub the sweet potatoes and bake at 425 F for around 35 to 45 minutes depending on the size of the spud.
2. Meanwhile chop up the cilantro and mix it with the feta cheese.
3. Once the potatoes are baked and fork tender, split them down the center and fill with cheese mixture.
4. Serve hot with a touch of cayenne.
