When was the last time you associated healthy eating with chocolate? Well, all that is about to change today with these super yummy, energy packed chocolate truffles. I've combined a few powerhouse ingredients to make these little nuggets of joy. The holiday season is coming up, and you can easily whip up a batch of these for dessert or as a snack. These "truffles" are compatible with almost any diet since they are free of processed sugar, gluten, and dairy! Plus, they look so cute all stacked up in a little tower.
Makes 14 - 16 truffles
3 tbsp chia seeds
1 cup medjool dates, pitted
2/3 cup hazelnuts (or any other nuts you prefer)
2 tbsp cocoa powder, plus more for coating
1 - 2 tbsp almond milk or water
1/2 tsp vanilla
1. Add all the ingredients to a blender and blend until a sticky paste is formed.
2. Using about a tablespoon of mixture at a time, roll into little balls.
3. Roll the balls in some cocoa powder to coat. You can also use coconut flakes, more nuts, or powdered sugar.
4. Refrigerate for thirty minutes before serving.
